Seacoast chef returns to roots with La Casita restaurant – News –

KITTERY, Maine While he was growing up in his native Puerto Rico, Gaby Velez and his brothers would always stop for a steak sandwich at their favorite food truck called Cariño.

After attending New England Culinary Institute in Vermont, Velez settled into the Seacoast restaurant community, working as chef in a number of kitchens. However, Velez always maintained the dream of opening a small eatery where he could share his favorite Caribbean dishes.

“I grew up eating that sandwich, I’d get it with my brothers, after a baseball game; we’d go to that food truck,” Velez said. “Most of the food in Puerto Rico has a lot of influence from the Cubans who immigrated to the island. The Cubano sandwich is in every bakery in my hometown.”
